750g Soy milk
83g Corn starch
Corn meal (to fry)
Sugar (for the topping)
Cinnamon (for the topping)
1.Dilute the corn starch with 1/3 of the milk.
2.Boil the rest of the milk together with the orange zest.
3.When the milk starts to boil, remove the orange zest, add the previously diluted corn starch and cook it on a low heat.
4.Keep stirring with the whisk and wait for the mixture to boil and thicken. Once this happens, pour it inmediately over the chosen mold. Cover it with plastic film (the film should touch the dough to prevent crusts).
5.Let it cool and set aside for 24 hours.
6.Add oil in a pot or a pan over a medium-high heat.
7.Cut the dough into rectangles. Be careful, because if they are too thin, they can break when handled.
8.Cover the rectangles with corn meal and fry them.
9.Once fried, and before they cool down completely, cover them with sugar and cinnamon.
*We have used corn meal for the coating, but feel free for replace it with rice flour or a suitable for frying gluten-free mixture of flours.
*You can flavor milk with other ingredients such as star anise, lemon zest, vanilla,...
